History

Red Chief is a mutation of the famous Red Delicious, discovered in the 1950s in the United States. It stands out from its parent with a more intense and uniform red colour, and a more elongated, striped shape.

A natural mutation that took the Red Delicious to its ultimate visual expression.

Introduced to Europe in the 1970s, it found ideal conditions in the orchards of central and southern France to develop its intense red colour. Its spectacular appearance makes it the queen of fruit displays.

Red Chief can be stored for up to 6 months in cold storage while maintaining its crunchy texture.

Its dark red colour is due to a high concentration of anthocyanins, powerful antioxidants.

It is one of the most photographed apples in the world: its perfect shape makes it ideal for advertising and decoration.

Ingredients

  • 6 Red Chief apples
  • 300g sugar
  • 100ml water
  • Red food colouring (optional)
  • 6 wooden sticks

Insert a stick into each apple. Boil sugar and water to 150°C (hard crack stage). Dip each apple, turning to coat evenly. Cool on greaseproof paper.

  • 3 Red Chief apples
  • Cinnamon
  • Icing sugar (optional)

Slice apples very thinly with a mandoline. Arrange on a baking tray lined with parchment. Sprinkle with cinnamon. Bake at 100°C for 2 hours, turning halfway.

  • Strawberries
  • Grapes
  • Kiwi
  • Melted chocolate

Cut fruit into pieces. Thread onto wooden skewers, alternating colours. Serve with melted chocolate for dipping.
